In regards to both Variant and Archery styles. Are they similar to releases in the way that a Quincy could swap between Archery and Variant until they hit Mastered level. Or are they stuck as they are right at character creation?
If not, would I be able to do something like change my character's Style as they make the jump from Above Average to Advanced, or something similar to that?

As stated on the Quincy Guide:
"You pick the way you play at the start of the game. On your profile template you will see either Archery Style or Variant Style; you will be granted access to one of these and the other one will be locked permanently."
Hope this answers your question.
