Good. Gage is much like Theocelese in the way that sometimes they were best left alone to work. Next are large russet potatoes, washed and cut in halves. The ten pounds or so being made are placed in a baking pan of colossal proportions, seasoned and set in the oven. They will take the longest. Coffee is the next to be made, and theocelese does not use cheap ingredients nor does he make the hot drink in the Americans fashion. The grounds are added to the boiling water with a tablespoon of sugar. One of the large cups he makes for himself, the other for his new partner, ally and friend. The coffee is strong, bold and sweet. To go with this, a fresh piece of strawberry tart. When the drink and dessert are delivered, he sets them on a small rolling table with a cloth napkin as well as a fork and spoon. Theocelese can not explain, nor would he ever understand why he feels the need to say what he is to say to the young man. He acted as a host first and foremost.

“I will return in a day. There is enough to keep you...but if your pallete requires something different you are welcome to my kitchen. It’s just behind the counter. Is there anything else you need?”
