BMRegarding the canon item that was made for me, I was wondering what sharpness it would be dictated as. Considering it doesn't have a tier and its impervious to damage, I'm guessing it's seele?

Due to the unique nature of this item and the origins of which we have decided that the Tier is [VII] canon and the Sharpness is Seele. No future alterations of this item are allowed however save for possible slight rewording to get the Fluff in the tech to move around. No new abilities or item rebuilds are allowed.

BM here, Jade is half right. As a canon item it's tier is considered VII. However seele sharpness is reserved for energy weapons as a passive except for certain exceptions. Your weapon has Bankai Sharpness.
